After a full night’s rest at the Copenhagen Towers, we kicked off Day 3 with a breakfast buffet that felt straight out of the future with a high-tech smoothie machine and ginger shots. It was definitely the perfect way to refuel for a busy day ahead!
Our first stop was in North Harbor, where we visited Copenhagen Infrastructure Partners (CIP). The architecture upon walking in wowed us with soaring ceilings, lush greenery, minimalist design, and a stunning view of Copenhagen’s waters.

We met with the VP of Global Partnerships who walked us through CIP’s leading role in sustainable energy investment. Raising over €32 Billion for investment, they have multiple projects, such as wind turbines and Solar PVs, across 30 countries. Students also had the chance to ask thoughtful questions about risk management and how CIP adapts its sustainable models to shifting geopolitical landscape.

After the visit, we made a stop at Juno Bakery, world famous for their Danish cardamon buns. We picked up a box and enjoyed them at a nearby park!

Then it was back to the Towers for lunch and a quick shopping break at Fields Mall before heading to our next destination: Copenhagen International School. In small groups, we were given personal tours by the students themselves. Their commitment to sustainability was impressive; we learned that 30% of the school’s energy comes from solar panels that cover the entire exterior of the building, and their multi-material recycling system helps reduce waste in every classroom.


After a quick break, we wrapped up our evening at Gro Spiseri, a cozy restaurant known for meals with ingredients grown in its rooftop garden. We were served a delicious five-course tasting menu featuring beetroot salad, mussels, scallops, fish, and a “chocolate” cake that was actually made from barley by-product, proving that sustainable can also mean scrumptious. We even got to meet the restaurant’s chickens and rabbits!


Before calling it a night, we popped into a local grocery store to grab breakfast for the next day. See you tomorrow for our journey to Samsø!
